Yeah man, we know it’s winter and we’re supposed to be all, “Oh, have you tried so-and-so’s malty winter seasonal?” Instead, we decided to take a break from the season and sample a new-ish IPA from local brewer Dean Wise, the man behind Below Grade Brewing, Wise’s one-barrel basement operation in Northwest Crossing.
The Validation Imperial IPA is a double IPA that packs a noticeable 8.2% punch with a claimed 100+ IBU. Created from “six premium malts,” this home-brew of sorts carries about as much hop flavor as we can remember ever tasting in a beer. Find your own 22 ouncer at Newport Market, though you best hustle, word is Mr. Wise recently dropped off another seven cases after the local grocer sold out of the first 11. Keep your peepers peeled for his latest creation due out on shelves soon, an Imperial Cascadian Black Ale (or Black IPA, you Philistine) dubbed Dangerous Kate.
