Chef's Choice -- Gavin McMichael, The Blacksmith

Sparrow Bakery's Croque Monsieur

Believe it or not, my favorite local dish is a pastry, sort of. Because I run a dinner house I don't get to go out in the evenings very much. But, I love pastries done right. That's why one of my very favorite places in town is Sparrow Bakery. Their pastries transport you right to Paris. The croissants have that crisp snap and buttery interior that is so rarely found outside France. But I think my favorite meal right now may be Sparrow's Croque Monsieur-a delicious brioche bread sandwich with ham, grain mustard that is smothered in a thyme-infused bechemel sauce and baked with gruyere cheese until golden brown-at mid morning with a cup of coffee followed by the best banana bread in human history. It's so good. I buy it from them to serve with my Bananas Foster at the restaurant because I would not even attempt it. It's just too good as it is.
